About the Role:
As a chef at The Raw, you’ll be responsible for delivering exceptional seafood dishes and overseeing daily kitchen operations. Your role will include:
- Preparing, cooking, and plating dishes to fine dining standards, focusing on seafood and seasonal produce
- Handling seafood with care, maintaining the highest standards of hygiene, freshness, and sustainability
- Conducting seafood butchery, sashimi preparation, and shellfish cleaning with expert technique
- Collaborating with fellow chefs to develop seasonal and tasting menus
- Monitoring kitchen inventory, managing orders, and controlling food costs
- Supervising and training junior kitchen staff in fine dining preparation and service
- Ensuring compliance with food safety and workplace health regulations
- Maintaining kitchen cleanliness, organization, and equipment care
- Communicating effectively with the front-of-house team to create a seamless dining experience
What We’re Looking For:
- Minimum 2–3 years’ experience in a seafood restaurant or high-end modern Australian/Asian restaurant
- Strong seafood handling, preparation, and presentation skills
- Knowledge of local and international cuisine with contemporary plating and flavor techniques
- Excellent time management, attention to detail, and leadership ability
- Certificate IV in Commercial Cookery or equivalent qualification
- Flexibility to work evenings, weekends, and public holidays
Salary & Benefits:
- Full-time role, in person at Geelong, Victoria
- Pay range: $65,000 – $80,000 AUD per year
- Visa sponsorship available for qualified candidates
